Can you believe August is here already? To beat the summer heat, I wanted to find a refreshing dessert that I could take to family gatherings, picnics, or family reunions. Fresh peaches are delicious this time of year, but instead of a regular peach pie, I wanted something more refreshing. I found this recipe on Food.com.  I hope you enjoy it.

Fresh Peach Pie

Crust

1½ cups all-purpose flour

½ teaspoons salt

1½ tablespoons sugar

2 tablespoons milk

½ cup oil

Pie Filling

1 cup sugar

2 tablespoons cornstarch

1 cup water

1 (3 oz.) package peach gelatin

3 cups peeled ripe peaches

Directions

For Crust: Mix all ingredients with a fork and press into a 9-inch pie plate. Prick all over with a fork. Bake at 400 degrees for 12 minutes.

For Pie: In a saucepan, combine sugar, cornstarch, and water until smooth. Cook and stir over medium heat until bubbly and thickened. Remove from heat; stir in gelatin until dissolved. Cool. Arrange peaches in crust; pour filling over peaches.

Chill until set, for about 2 hours. Serve topped with whipped cream.
