There are so many different choices when it comes to selecting pork for your
meal planning. Sausage is always a good choice, and you can incorporate it into
any meal. The recipe I am sharing comes from a cookbook that I purchased from
Jacob’s Church and was submitted by Shirley Koons.
It is sure to please—especially if you’ve been out shoveling snow!
Sausage Potato Casserole
Ingredients
1 pound bulk pork sausage
1 – 10 ¾ ounce can of condensed cream of mushroom soup,
undiluted
¾ cup of milk
¼ cup chopped onion
½ teaspoon salt
¼ teaspoon pepper
3 cups thinly sliced peeled potatoes
1 cup shredded cheddar cheese
Directions
In a large skillet, cook sausage until no longer pink, drain. In a bowl,
combine soup, milk, onion, salt, and pepper. In an ungreased 11x7x2
baking dish, layer half of the potatoes, soup mixture, and sausage; repeat
layers.
Cover and bake at 350 degrees for 1 ½ hours or until the potatoes are
tender. Uncover and sprinkle with cheese. Return to oven until the cheese
is melted, about 5 minutes.
