month Hello, everyone. Normally, during this time of year, I am searching for warm
or hot recipes, so it would be more inviting after you came in from out of the cold,
winter weather. Surprise! As I am writing this message, it is nearly 60 degrees outside.
I think “Mother Nature” has a great sense of humor.
I didn’t have to look for a typical Irish recipe to share. I purchased a container of
whipped topping last weekend for a recipe that I was preparing. Most of the time,
there is a recipe on the back of the insert in the lid, and this time it worked out for
me: a recipe for “Mint Brownie Ice Cream Dessert.” It’s not Irish, but it is the correct
color for St. Patrick’s Day. How can you go wrong with brownies and ice cream?

Mint Brownie Ice Cream Dessert

Ingredients:

1 package Chocolate Fudge Brownie Mix (9 x 13 size)
2½ cups Semi-Sweet Chocolate Chips, divided
1 (14 ounce) can Sweetened Condensed Milk
1 (48 ounce) container Mint Chocolate Chip Ice Cream, softened
1 (8 ounce) container Extra Creamy Whipped Topping, thawed
