Pet Snickers Tickling Our Tastebuds

Hello, everyone. I mentioned in a previous message that I would try to get the recipe
for one of the Champion cakes at the Thurmont & Emmitsburg Community Show. Since
Maxine Troxell baked both the Champion and the Reserve Champion, I called to see
if she would be willing to let me share one of them with you. She quickly said that she
would be happy to, and when I asked which recipe she would reveal, she graciously agreed
to share the recipe for her Champion Hummingbird Cake. A special “Thank You” to
Maxine for sharing. I hope you and your family have a wonderful Christmas.

Hummingbird Cake

Ingredients 1 cup mayonnaise or sour cream
3 eggs
2 cups sifted cake flour 1 tablespoon ginger-flavored brandy or water
2 teaspoons baking soda 2 cups ripe mashed bananas
2 teaspoons baking powder 1 can (8 oz.) crushed pineapple in juice, undrained
2 teaspoons ground cinnamon ½ cup chopped pecans
½ teaspoon salt
½ teaspoon allspice
1 ½ cups sugar

Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10
minutes; remove from pans to wire rack. Cool completely. Frost with the following
frosting recipe or use your favorite cream cheese frosting. If you use a real cream
cheese frosting, you will need to refrigerate the cake.

Since we couldn’t use cream cheese in the frosting at the Community Show, I used a
mock cream cheese frosting.

Mock Cream Cheese Frosting
6 cups powdered sugar
½ cup butter or margarine
½ cup Crisco (you can use butter flavored Crisco)
1 teaspoon vanilla
1 teaspoon cream cheese flavoring
½ cup water (more or less but just enough for spreading consistency)
garnish with toasted coconut, candied pineapple and a maraschino cherry(optional)
