I wanted to share a recipe that used fresh blueberries, and as I looked through
my many cookbooks, one particular recipe appeared several times: Blueberry
Buckle. I think I actually made this recipe for the Community Show several years
ago and entered it in the “Coffee Cake” class. I hope you enjoy it.
Blueberry Buckle
Ingredients
¾ cup sugar 2 cups sifted lour
¼ cup solid shortening ¾ teaspoon salt
1 egg, beaten 2 teaspoons baking powder
½ cup milk 2 cups blueberries

Wolfe. Cream together sugar and shortening. Beat in egg and
milk. Sift together lour, salt, and baking powder and add.
Gently stir in the blueberries. Turn into greased 9 x 13 inch
pan.
Topping: ½ cup sugar; 1 teaspoon cinnamon; 1/3 cup
lour; ¼ cup butter
Crumble together and sprinkle on top. Bake at 350
degrees for 35 minutes.
