Tickling Our Tastebuds

Hello, everyone. With Halloween fast approaching, I am reminded of when I was a youngster, happily trick-or-treating
through town, friendly townspeople putting goodies into my bag. When it started to get dark, we would all gather at the
west end of town near the “Doughboy” for the Halloween Parade in Emmitsburg. What fun! We walked down Main Street
to Federal Avenue, followed it up to DePaul Street, and then back to the grove of trees at St. Joseph’s Church.
When the parade was over, we would have some delicious refreshments while we waited for the judges to announce the
winners of the costume parade. The refreshments were the highlight of the evening: gingerbread and apple cider. I didn’t
realize it then, but I do now. It will make the perfect treat when your little goblins return from trick-or-treating, or you can
share it at a holiday party. I hope you have a fun and safe Halloween.
Gingerbread
2 ¼ cups all-purpose lour or cake lour ½ cup shortening
⅓ cup sugar 1 egg
1 cup dark molasses 1 teaspoon soda
¾ cup hot water 1 teaspoon ginger
Heat oven to 325 degrees. Grease and lour square pan, 9x9x2 inches. Measure all ingredients into large mixer
bowl. Blend for half a minute on low speed, scraping bowl constantly. Beat 3 minutes at medium speed, scraping
bowl occasionally. Pour into pan. Bake 50 minutes or until a wooden pick inserted in the center comes out clean.
Serve warm and, if desired, top with whipped cream, applesauce, or just a sprinkle of confectioners sugar.
